Why can't I switch to the negative one screen or the second page by sliding the screen left or right on the POCO X7 Pro?

Make sure that the second page is enabled on the home screen. You can long-press an app on the home screen of your phone and drag it to the far right of the page until the second page appears. The same steps are used for the third and fourth pages.
You can go to [Settings] >> [Home screen] >> [-1 screen] to set what you want to show.
